Pumpkin spice cake is all about its wonderful smell. Who can resist the magic perfume of cinnamon, ginger, nutmeg, and cloves in the house?
Well, I can’t. That’s why every now and then I make this cake at home and to make it even more special, I add a delicious greek yogurt frosting. God, this is to die for!
1/2 cup of unsweetened shredded coconut
1 cup of unsweetened greek yogurt
1 lemon juice and zest
1 teaspoon of vanilla extract
2/3 cup of
coconut flour (92 grams) 4 tablespoons of
psyllium a pinch of salt
4 teaspoons of baking soda
2 tablespoons of apple cider vinegar
1/2 cup of
coconut oil, melted (120ml) 400g of baked and cool pumpkin, mashed
1/2 cup of raw honey (or any sweetener you like)
2 tablespoons of cinnamon
1 tablespoon of ground ginger
1 tablespoon of ground cloves
1 tablespoon of ground nutmeg
Mix all together and keep in the fridge until it’s time to frost the cake.
Preheat oven to 150C (300F)
In a bowl mix all dry ingredients. Reserve.
Using another bowl, beat the eggs then add coconut oil, vinegar, and honey. Mix all together.
Fold the wet ingredients into the dry mixture.
Now add the mashed pumpkin and mix things well.
Grease a loaf pan with coconut oil (or use a silicon one) and pour your batter into it.
Bake it for 1 hour or until a toothpick inserted in the centre comes out clean.
It’s done! Wait until the cake is completely cool before frosting.

OK, now imagine a
delicious chocolate lava cake, with that gooey centre, straight from the oven. However, you think this is too simple, you want more! Then you pour a smooth chocolate ganache on it. Next, add some fresh strawberries. To finish, you decide to dip a delicious banana popsicle in its centre.

dark chocolate (90%) 1 tablespoon of butter
1 tablespoon of honey (optional, or any other sweetener you like)
100g of raw frozen bananas
2 tablespoons of plain yogurt

Preheat oven to 150C (302F).
In a bowl put together the chocolate, butter and honey. Melt them in a double boiler or using a microwave (be careful to not burn the chocolate).
After melting and mixing everything together, bring it out from the double boiler and add the eggs.
Mix until everything is well combined.
Grease two small ramekins with butter and add some cocoa powder to it.
Place the batter into the ramekins and bake it for 6 min (approximately).
Each cake must be firm on the outside but still have that delicious and gooey centre. Maybe you will need to do some testing to find the right time of your oven.
Pour the pure cream in a saucepan and bring it to boil.
Turn off the fire and then add the chocolate.
Mix everything together until the chocolate melts and the ganache gets a shine and smooth look.

Mix all together (fruit you chose + yogurt) using a food processor.
Add the mixture to a popsicle mold and freeze it for about 3 hours.
Unmold them when completely set.
Get the lava cake straight from the oven.
Pour some ganache on it.
Next place the popsicle and some strawberries.
Done! Time to dive into it! Enjoy as a special treat. 🙂
