Flourless Chocolate and Banana Bread • Healthy cakes #10

Who doesn’t like the convenience of a flourless recipe?
Even more, if this cake is a healthy option right?

This Flourless Chocolate and Banana Bread recipe is ridiculously simple and still incredibly delicious.

Actually, I would suggest you watching yourself once this beauty is ready … otherwise, the whole cake can end up in your tummy in the blink of an eye. 🤣

Another quick note, I used tahini for a nut-free version, but this cake is equally delicious made with almond or peanut butter!

Ingredients
  • 1 and 1/4 cups (324 grams) of tahini (or almond butter)
  • 3 large eggs, at room temperature
  • 2 medium (260 grams or 1 cup) ripe bananas, sliced and mashed
  • 6 tablespoons (48 grams) of cocoa powder
  • 1 and ½ teaspoons of baking powder
  • A pinch of salt
Directions
  1. Add tahini, eggs, bananas, cocoa powder, baking powder, and salt to a blender and pulse until smooth and creamy.
  2. Grease a cake pan with coconut oil and cover it with a baking sheet. I used a 20cm loaf pan here.
  3. Now, add in the batter to the pan.
  4. In a preheated oven to 180°C (350°F), bake it for 45 minutes. ⏰
  5. Depending on your oven, it might take more or less to be ready.
    The right moment is when a toothpick inserted in the centre of the bread comes out clean.

🍌 Banana bread with chocolate chips • Healthy cakes #8

Banana bread has a special place in my heart.
Why? Well, it’s simple, it’s not every day that you find something that is the perfect combination of bread and cake, right?

I ❤ it toasted and served with butter on a lazy Sunday morning.

This time I decided to level it up by adding walnuts and dark chocolate chips.
Boy, that was heaven! You gotta try this banana bread with chocolate chips yourself! 😜

Ingredients
  • ⅔ cup (80 grams) of sesame seeds
  • 6 medium eggs
  • ½ cup (85 grams) of coconut oil, melted
  • 1 tablespoon of honey (or any sweetener you like)
  • 2 tablespoons of vanilla extract
  • ⅓ cup (40 grams) coconut flour
  • 1 teaspoon of psyllium husks
  • 1 tablespoon of cinnamon
  • 2 teaspoons of baking powder
  • A pinch of salt
  • 2 medium (300 grams or 1 cup) overripe bananas, chopped
  • ½ cup (55 grams) of 85% dark chocolate, chopped
  • ½ cup (85 grams) of walnuts, chopped
Directions
  1. In a food processor add the sesame seeds and process for 4 minutes. ⏰
  2. Then, add eggs, coconut oil, honey, vanilla extract and mix them for more 5 minutes. ⏰
  3. Next, add the coconut flour, baking powder, psyllium husks, cinnamon, and salt.
    Mix just enough to incorporate all ingredients.
  4. Finally, add bananas, chocolate chips, walnuts, and stir gently using a spoon.
  5. Grease a cake pan with coconut oil and cover it with a baking sheet. We used a 20cm loaf pan here.
    Then, add in the batter.
  6. In a preheated oven to 180°C (356°F), bake it for 45 minutes. ⏰
  7. You’ll also know when it’s ready if you can do the toothpick test on it:
    Insert a toothpick into the centre of the cake and it should come out clean.
  8. IT’S DONE! 🎉

Tip: trying to reduce your daily intake of carbs?

You may already know that frozen banana ice cream is the perfect base for a healthy ice cream, right?

So how about a delicious twist?
That’s why I’ve decided to bring here a combination that I simply LOVE:

Banana and peanut butter ice cream 😍

Ingredients-wise, this healthy treat is basically made only with a combination of overripe bananas and peanut butter.

For the peanut butter, here I used a crunchy version (I like to find pieces of peanut in my ice cream), but you can use the smooth one.
Now for the bananas remember to use overripe ones, as it will be the natural sweetener of our ice cream.

Perfect for those super hot summer days! ☀️

Ingredients
  • 4 (~550 grams) overripe bananas, chopped and frozen
  • 1 cup (250ml) of coconut cream
  • 1/2 cup (130g) of peanut butter (or any other nut butter)
Directions
  1. In a food processor add bananas, coconut cream, and peanut butter.
  2. Mix until everything is well combined and you get a super smooth and creamy mixture.
  3. Pour the mixture in an ice cream container and let it set in the freezer for one hour. ⏰
  4. IT’S DONE! 🎉

Another fantastic part of this recipe is that kids will love it.

You know it can be challenging for conscious parents to find a healthy dessert to serve their kids.

Super healthy BANANA BREAD 🍌 without sugar | Healthy cakes #3

Today I am bringing here one of my favourite recipes: Banana Bread without sugar and wheat flour.

The secret to get this banana bread done right is to use overripe bananas, yep those ones you are about to throw away.

They are important because they are super sweet and will give to this cake perfect sweetness, with no need to add any extra sugar.

And if you were not convinced just yet how amazing this bread is let me tell you that it is also gluten, dairy, and nut free!

Ingredients
  • 1/3 cup of coconut flour
  • 2 tablespoons of psyllium
  • a pinch of salt
  • 1 tablespoon of ground cinnamon
  • 2 teaspoons of baking soda
  • 3 large eggs
  • 2 teaspoons of apple cider vinegar
  • 1 tablespoon of vanilla extract
  • 1/4 cup of coconut oil, melted
  • 2 ripe bananas, mashed
Directions
  1. In a medium-sized bowl, mix coconut flour, psyllium, salt, cinnamon, and baking soda.
  2. Meanwhile in another bowl, mix eggs, apple cider vinegar, vanilla extract, and coconut oil. Then add the mashed bananas and mix them well.
  3. As I mentioned above, make sure to use super ripe bananas for this recipe, this is what will make the result nicely sweet.
  4. Now, stir the dry ingredients into the wet mixture.
  5. Grease a loaf pan, or use a silicone one if you prefer. Mine here is a 20cm one.
  6. Pour your batter into the loaf pan and bake it for 30 minutes at 160C (320F). ⏰
  7. It’s DONE! 🎉
    Let it cool down before serving.

Yeah, I know this is technically a bread – after all, the name is banana bread – but I consider it an excellent healthy cake option for those with some sort of food intolerance.

Banana and chocolate ganache pie #glutenfree

This is that kind of recipe you can make for a celebration and rest assured everybody present on the day will be super impressed and be instantaneously tempted to try it. 🙂

I know it might seem like a lot of work at first glance, but hang with me for a second; if it’s something you’re making for a special occasion, it needs to be pretty, delicious and, of course, perfect! Let’s be honest, you don’t have a gluten-free banana and chocolate ganache pie in front of you that often, do you? So why not treat yourself and your guests by having this beauty for a party?

Ingredients
  • For the pie
    • 1 pie crust (recipe here)
    • 1 cup of chocolate ganache (recipe here – this is optional and just for the record, I’m using the dairy free version)
  • Cream cheese filling
    • 250 grams of cream cheese (at room temperature)
    • 10 pitted dates, soaked (at least 2 hours)
    • 1 tablespoon of vanilla extract
    • 1 cup (250 ml) of pure cream, whipped
    • 2 ripe bananas, sliced (or enough to make a base)
    • ¼ cup (40 ml) of melted dark chocolate (I’m using here 90%)
  • To garnish
    • Some leftovers of the sliced banana we used for the filling
    • Juice from 1 small lemon
    • 1/2 cup (125 ml) of pure cream, whipped and flavoured with vanilla extract
    • Some shaved dark chocolate (again, using here 90%)
Directions
  1. Pie crust
    1. Get your pie crust recipe and make sure to prepare it in advance as we need this crust completely cool.
  2. Cream cheese filling
    1. In a food processor add the cream cheese, dates, and vanilla extract. Blend everything until smooth, reserve.
    2. Meanwhile, using an electric mixer (or your hands if you are in the mood to work out), whip the pure cream until firm.
    3. Fold the whipped cream into the cream cheese mixture very gently. Reserve.
  3. Chocolate ganache (optional)
    1. Get your chocolate ganache recipe here and make sure to prepare it in advance as we also need the ganache completely cool.
  4. Assembling the pie
    1. Get the melted chocolate and brush all over the interior of the pie crust. This is to isolate the crust and to prevent it from getting soaked.
    2. Make a bed of sliced bananas, just enough to cover all the surface.
    3. Pour in the cream cheese filling then the chocolate ganache layer at the top. If you feel the first layer is not firm enough, just pop the pie into the fridge for around 30 minutes to set before adding the chocolate ganache.
    4. Cover all the surface with more sliced bananas. Next, brush over them the lemon juice (this will prevent the bananas from getting darker).
    5. Garnish with whipped cream and some shaved dark chocolate.
    6. Enjoy this treat in moderation – if you can. 😉
