You may have heard about zucchini noodles before. It’s also known by a variety of different other names (zoodles, zucchini pasta, zucchini spaghetti), but all of them are the same: a real food pasta made only using zucchinis.

That’s right, you need only a single ingredient – zucchini – to make your pasta. This is an amazingly healthy way to add more good stuff into your body!

Remember to also use your creativity to add extra flavour to it. You can top with a delicious homemade tomato sauce, add to a soup, mix with some fresh broccoli, garlic, olive oil, and chicken breast… Hmm, I’m already salivating here thinking about all the dishes I can make with it.

Ingredients
  • 2 zucchinis
  • Salt and black pepper to taste
Directions
  1. Wash your zucchinis. Cut off the ends and let’s start making our noodles.
  2. There are many ways to make it. You can use a spiralizer, veggetti, grater or a knife. All these options will change the final looking of your noodle/pasta, but the taste will be essentially the same.
  3. After you get it done, toss in a pan with some salt and pepper.
  4. And it’s ready! Serve it with a delicious Homemade Tomato Sauce and garnished with shredded parmesan cheese. YUMMY!

Brazilian-style Chicken Pie #lowcarb #glutenfree

This chicken pie is super popular in Brazil, we call it “blender pie”, as the idea is simply stuff all the batter ingredients into a blender jar and it’s done. Like magic! 😀

The filling might vary, sausage (hotdog) with tomato sauce, minced beef, or even vegetarian, but chicken is the star! Give it a try, it’s very easy to make and you don’t need to stick with my filling suggestion, try to create your favourite version!

Ingredients
  • Pie Batter
    • 4 eggs
    • 3 tablespoons of yogurt
    • 2 tablespoons of coconut flour
    • 2 tablespoons of flaxseed
    • 1 tablespoon of psyllium
    • pinch of salt
    • 1 teaspoon of baking powder
    • 20ml of olive oil
  • Chicken filling
    • 100g of cream cheese (optional)
    • 300g of shredded chicken, sautéed with chopped onion and already seasoned.
Directions
  1. Pie batter
    1. In a bowl mix all ingredients together.
    2. Reserve.
  2. Shredded chicken
    1. Prepare your chicken the way you like the most. Here at home we usually boil it.
    2. After that, shred the chicken and then, in a fry pan, sauté it with olive oil, chopped onion, garlic, salt and black pepper.
  3. Assembling the pie
    1. Preheat oven to 160C (320F).
    2. Grease a cake pan with coconut oil (or butter) and pour some coconut flour on it. Here we are going to use a silicon one.
    3. Place half of your batter into it.
    4. Add the shredded chicken and put some spoons of cream cheese over it.
    5. Place the remaining batter. You’ll end up having 3 layers: batter, filling and batter.
    6. Bake it for 40 min or until it gets golden brown.
    7. Enjoy!

Hi my friends,
it’s Leo here and I must say: this recipe is a serious thing. We have tried many LCHF pizza crust recipes before, but nothing could beat this one.

It tastes and looks like a regular pizza, but it is also low carb high fat and super delicious.
It is a nut-free version from this recipe. Hope you like it. 🙂

Ingredients
  • 2 cups of shredded mozzarella
  • 3 tablespoons of cream cheese
  • a pinch of salt
  • 1 tablespoon of dry oregano
  • 1 tablespoon of flaxseed meal
  • 1 tablespoon of psyllium
  • 2 tablespoons of coconut flour
  • 1 egg
Directions
  1. Preheat oven to 160C (320F).
  2. In a bowl add mozzarella and cream cheese. Melt them using a microwave or in bain-marie.
  3. Bring your bowl to a work surface and add the rest of the ingredients.
  4. Combine everything until you have a dough texture. Reserve.
  5. Prepare a pizza sheet with parchment paper.
  6. Start by opening your dough on it (any shape you like) using your fingers.
  7. Top it with your favourite flavour, we used tomato sauce, cherry tomatoes, mozzarella cheese, chilli flakes, and rockets.
  8. Enjoy it! 🙂

Winter is just around the corner here in Australia, and nothing matches this season better than some, low carb and high fat, comfort food.

This is an easy recipe, and it will make your belly warm and cozy while you enjoy this delicious Zucchini Gratin.

Ingredients
  • 1kg of sliced zucchini (baked for 20 minutes and seasoned with salt, black pepper, and olive oil)
  • 500g of shredded chicken
  • 100g of feta cheese
  • 100g of shredded mozzarella
  • 1 cup of pure cream
Directions
  1. Preheat oven to 160C (320F)
  2. Using an oven-safe pan, prepare some layers with the main ingredients.
    1. Zucchini;
    2. Chicken;
    3. Feta cheese;
    4. Repeat until all ingredients were completely used.
  3. Finish by covering it with the shredded mozzarella and the pure cream.
  4. Bake it for 30 minutes.
  5. Enjoy it!
